Secret to preparing remarkable ratatouille at Cafe Azur

With Thanksgiving Day approaching, ratatouille would be a great addition to your table. Sidney Degaine, owner and chef of Cafe Azur, shares the secret to making the traditional French vegetable dish with help from FOX 26 News food segment contributor Cleverley Stone.



  • 2 eggplants
  • 1 white onion
  • 2 zucchini
  • 2 red peppers
  • 2 head of garlic
  • 1/2 tsp fresh rosemary
  • 1 tsp fresh thyme
  • 1 tbsp of tomato paste
  • 1 tbsp of water


  1. Sauté the eggplant, white onion, zucchini and red peppers separately with olive oil.
  2. In a different pan, cook the sautéed vegetables with olive oil, garlic, rosemary and thyme for five minutes. Then add the tomato paste and water.
  3. Stir for 20 minutes.
  4. Plate and garnish with lemon zest and fresh chopped basil.
