Protein Chocolate Chip Muffins - Allison's Cooking Diary

On this week's episode of Allison's Cooking Diary, we are making protein muffins. 

The secret ingredient may surprise you... cottage cheese! I promise you, you will not taste the cottage cheese. We blend it up, so the texture comes out nice and smooth. You can still have your sweet tooth and not feel bad about it! Enjoy!

Ingredients:
 

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • ⅓ cup granulated sugar
  • ⅓ cup vegetable oil
  • ¼ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup cottage cheese
  • ¾ cup milk
  • 1 cup chocolate chips

Method:

  1. Preheat the oven to 400 degrees.
  2. Add cupcake liners to a muffin pan.
  3. In a large mixing bowl whisk together the flour, baking powder, baking soda, salt, cinnamon and sugar.
  4. In a blender, add in the vegetable oil, maple syrup, vanilla extract, cottage cheese and milk. Pulse until there are no lumps.
  5. Pour the wet ingredients into the dry and fold until combined.
  6. Add in the chocolate chips.
  7. Using a cookie scoop, pour a scoop and a half into each cupcake liner. This amount will make 15 muffins.
  8. Bake for 15-18 minutes. The top will be golden.
