HOUSTON (FOX 26) - With food served from early morning until late night, Weights + Measures is developing into quite the dining destination in midtown Houston. Located in a warehouse on 2808 Caroline Street near Dennis Street, Weights + Measures is a restaurant, bake shop and bar.
During a visit to Weights + Measures on FOX 26 Morning News, CBS Sports Radio 650 show host Cleverley Stone learned from from chef/owner Richard Kaplan how to prepare a properly-poached egg, easy tomato-date jam and a cracked egg breakfast pizza.
Mushroom Toast
Prep 30 minutes
Cook 5 minutes
- 2 ea poached large AA eggs
- 2 oz Ingredient, breakfast, Cheese mix Menu
- 2 oz Ingredient, Mushroom Mix Menu
- 3 oz Item, Breakfast, sautéed onion Menu
- 4 leaves Upland cress
- ½ ea pumpernickel toast
- 1 ea W+M Breakfast Potatoes
- .3 oz AA unsalted solids butter
- 1 ea S+P to taste
- 1 ea W+M picked parsley Herb
- Breakfast, Cheese mix (½ lb burrata alla Panna cheese, ½ lb St. Andre cheese, ½ lb mozzarella fresh cheese)
- Soften cheeses to room temperature and thoroughly combine.
- Refrigerate until needed.
Mushroom Mix
- ¾ lb crimini mushrooms sliced
- ¼ lb oyster mushrooms sliced
- 2 fl oz olive extra virgin Italy oil
- 2 oz AA unsalted solids butter
- 2 ea S+P to taste Spice
- Sauté mushrooms in oil and butter until they release their water and are just soft.
- Season with salt and pepper.
- Refrigerate until needed.
Breakfast, Sautéed Onion
Prep 5 minutes
Cook 10 minutes
- 1 lb sweet onion
- 1 fl oz olive extra virgin Italy oil
- 1 oz AA unsalted solids butter
- 2 ea S+P to taste Spice
- Sauté onions in oil and butter until caramelized.
- Add salt and pepper to taste.
- Refrigerate until needed.
Morning Cracked Egg Pizza Components
- 11 oz Pizza Dough Ball
- Sauce Soubise
- Redneck Cheddar
- Cubed Cooked Pancetta
- Thin sliced Yukon Gold Creamer Potato
- 4 Cracked Grade A Large Eggs
- Shredded Basil
- Tomato & Date Jam

Ingredients
- ¼ cup olive extra virgin Italian oil
- ¼ lb AA unsalted solids butter
- 1.5 oz tomato paste
- 2 oz sliced peeled shallots
- 2 ea. smashed peeled garlic
- 1 oz fresh ginger thin matchsticks
- ½ lb canned roma tomatoes (San Marzano preferred)
- ¼ lb pitted dried dates
- 1/8 cup Harissa Sauce (store bought)
- ½ cup granulated sugar
- .05 lb sprig thyme herb
- 1 ea beans vanilla
- .05 lb basil herb torn
- 1 ea orange zest only
- .25 cup cider vinegar
- .5 tbsp kosher salt
- 1 tsp cracked black pepper
Directions
- Sauté shallots, garlic, ginger, tomatoes and dates in olive oil and butter.
- Simmer for approximately 15 minutes.
- Add harissa sauce , tomato paste, sugar, thyme, and vanilla bean.
- Simmer for another 10 minutes.
- Remove thyme sprigs and bean pods, add basil and orange zest and season with vinegar, salt and pepper.
- Let cool and store in the refrigerator in an airtight container.
