Rashi’s Sweet Potato Casserole w/ pecan & maple topping- Skinny edition

Ingredients for casserole:
-3 pounds sweet potato cut in cubes
-3 tablespoons brown sugar
-3 tablespoons maple syrup
-1/4 cup almond milk
-6 tablespoons olive oil
-6 tablespoons vegan butter

Ingredients for topping:
-3 tablespoons maple syrup
-6 tablespoons almond flour
-1.5 tablespoons melted butter
-1 cup pecans

Preheat oven 350 degrees. In 4 quarts of boiling water, boil the sweet potatoes for about 20 min (until soft.)
In the meantime, combine all the ingredients for the topping in a bowl.
Drain sweet potatoes when soft and mash them up. Add the rest of the ingredients using a potato masher. Put it in a casserole dish and top with the pecan maple topping.
Bake for 30 minutes and allow it to cool for 10 minutes! Enjoy!
