New Year's Eve finger food suggestions

- Finger foods are great for New Year's Eve parties. Chef Shannen Tune, owner of the Craft Burger food truck shows CBS Sports Radio 650 food show host Cleverley Stone how to 'chicken fry' a few popular party foods like short ribs, deviled eggs and bread pudding. He also demonstrates how to make them without frying.


Chicken Fried Short Rib

1Lb short rib 

1ea small onion chopped

1ea small carrot peeled and chopped

2ea celery stalk chopped

2ea cloves garlic

2ea thyme sprig

2cups beef stock

Salt and pepper to taste

1cup AP flour

1TBSP Cayenne pepper

2cups buttermilk

4 cups vegetable oil

 

Smoked gravy

2TBSP butter

2TBSP AP flour

2cups whole milk

2cloves smashed garlic

2ea sprigs thyme

2ea tomatoes smoked and seeded

2TBSP molasses

Salt and pepper to taste 

Directions

Season meat with salt and pepper and sear on high heat. Add onions, carrots, garlic, celery, and thyme. Sautee till browned. Cover with beef stock and cook in oven at 300 degrees for 3 hours. Allow to cool in liquid.

Once cooled cut short ribs in one inch pieces. Coat them in seasoned flour(salt, black pepper and cayenne pepper) then buttermilk and last back into the season flour. Fry in vegetable oil at 350 till golden brown.

For smoked gravy make roux with butter and flour. Stir in milk, garlic and thyme. Bring to a boil and reduce to a simmer. Add in smoked tomatoes and molasses and blend. Season with salt and pepper.


Chicken fried bacon wrapped deviled eggs

12ea eggs

2TBSP cream cheese

1TBSP mayo 

1TBSP Dijon Mustard

1tsp cayenne pepper

1tsp salt

1tsp black pepper

6 pieces bacon par cooked 

2ea whole eggs for egg wash

1cup seasoned flour

Directions

Boil eggs for five minutes and cool in water. Peel eggs, cut them in half and separate yolks from whites. Blend yolks with cream cheese, mayo, Dijon, cayenne, salt and pepper till smooth. Pipe mixture into cooked egg whites. Freeze for 2 hours. Coat eggs in flour then egg wash and last in season flour. Wrap with par cooked bacon. Fry in vegetable oil till golden brown.


Beer Battered Bread Pudding

1 loaf Challah bread diced

4ea whole eggs

4cups heavy cream

1TBSP;  cinnamon

1TBSP nutmeg

2TBSP Sugar

.5c white chocolate chips

.5c dark chocolate chips

.5 coconut flakes

Beer batter

16oz local craft beer

1c AP flour 

1TBSP Salt.

Directions

Mix eggs, cream, cinnamon, nutmeg and sugar. Coat bread with cream mixture. Mix in chocolate and coconut. Bake in buttered half pan at 350 for 30 minutes. Cool and cut into 1 inch wide by 3 inch long pieces. Coat in beer batter and fry till crispy.
