Cranked-up cranberry sauce & curried turkey tacos

- Smokey Cranberry Salsa

Ingredients

  • 8oz Can Whole Cranberries
  • Zest of Half an Orange
  • 1/4 Cup Chipotle Salsa
  • Juice of 1/2 Lime
  • 1/4 Cup of Chopped Cilantro
  • 1/8 Cup of Finely Diced Red Onion
  • 2 Tablespoons of Diced Jalapeno (remove seeds if desired)
  • 1/2 tsp Salt
  • 1/2 tsp Cracked Black Pepper
  • 1/2 tsp Cumin

Directions

  1. Combine ingredients in a bowl to top off your turkey tacos!

Thanksgiving Fusion Turkey Tacos

Ingredients

  • Thinly Slice left-over Thanksgiving Turkey (Skin on)
  • 1/2 Yellow Onion (1/4 inch sliced)
  • 1 Poblano Pepper (1/4 inch sliced)
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon Butter
  • 1/4 teaspoon Kosher Salt
  • 1/4 teaspoon Cracked Black Pepper
  • 1/4 teaspoon Cumin
  • 1/4 teaspoon Chili powder
  • 1 1/2 teaspoon Minced Garlic
  • Juice from 1/2 lime

Directions

  1. Sauté onions and peppers in butter and oil until just golden brown, then add Kosher salt, cracked black pepper, cumin, chili powder and garlic. Sauté for 30 seconds then add lime juice.
  2. Add your turkey breast and cook on medium heat until warm. Be careful to not overcook the turkey.
  3. Take warm flour or corn tortillas, stuff with the turkey breast, onions and peppers and top with your smoked cranberry salsa.
